RED ONION

Ingredients
1 small Red Onion, halved and thinly sliced. *
* Soak the red onion in a bowl of heavily salted ice water for 15 minutes.
4-5 tomatoes, quartered
1 cup olives, halved and pitted
5 Persian cucumbers
1 4-ounce block Greek feta cheese, packed in brine
1 head of chopped romaine lettuce
1/4 cup extra virgin olive oil
2 TBSP red wine vinegar
1 TBSP Dijon mustard
1 tsp fresh parsley

1 tsp Italian Spice Blend
1/8 tsp salt
Black pepper to taste

Directions
Salad
Add lettuce, tomatoes, cucumbers, and olives to a large bowl.
Drain the red onion, add to the bowl, and toss. Drain the feta and slice evenly
Dressing
Combine ingredients in blender and blend on high to emulsify. Pour immediately onto prepared salad.
